Food For Fussy Eaters: Avocado Banana Bread!

Allie Gaunt from One Handed Cooks is back for our very special segment: Food For Fussy Eaters.

 

"Today I'm making an avocado banana bread, which is a really nutritious alternative to the store-bought variety that kids love," Allie explains.

The avocado provides a nutrient-rich alternative to the saturated fat-laden butter, which gives the loaf a lovely, lighter, softer texture.

 

STEP ONE: Preheat the oven to 180 degrees Celsius and grease and line a 23x13cm loaf tin.

STEP TWO: Place the flours, baking powder, baking soda and salt in a large bowl and stir to combine. 

 

 

 

STEP THREE: Place the eggs, banana, avocado, honey, and vanilla in a separate bowl. 

STEP FOUR: Add the banana avocado mixture to the dry ingredients and stir until just combined. 

 

STEP FIVE: Put the mixture into the loaf tin and bake in the oven for about 45 minutes (or until the top is golden brown).

If the loaf is browning up too quickly, simply cover with foil as it continues to cook.

Allow the cooked loaf cool in the tin for 5 minutes, then place on a wire rack to finish cooling.

Slice and serve, or freeze in individual portions. 

 

STEP SIX: Slice up and eat! You may even slice into fingers for a snack or freeze for the kids’ lunchboxes.

  • 1 cup plain flour
  • 1 cup wholemeal plain flour
  • 3 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs
  • 3 medium ripe bananas, mashed
  • 1 ripe avocado, mashed
  • 1/4 cup honey (or maple syrup or sugar)
  • 1 tsp vanilla extract
