Home bakers across the nation have gone crazy over homemade scones and banana bread, some even making bread in their slow cookers!
Now the latest craze to kick off is carrot cake, it’s a good way to use up carrots in the fridge and also get some sneaky veg into the kids.
Shared on a home budgeting page, the 4-ingredient carrot cake recipe has gone viral.
It’s quick, easy and the kids will love it.
Ingredients:
2 cups self-raising flour
2 cups of grated carrots
1 tin of condensed milk
100gms of pecan nuts (or walnuts)
*note, you can also add a small handful of sultanas
Method
Combine all ingredients
Pour into a lined loaf tin
Bake for 45 minutes at 180C for around 45 minutes.
Optional:
Cream cheese icing
Ingredients:
60g softened butter
500g sifted icing sugar
250g cream cheese
80ml lemon juice
Method
Using a mixer or handheld mixer beat the cream cheese until smooth.
Add the softened butter and beat for 30-60 seconds until smooth and well combined.
Add lemon juice and sifted icing sugar and continue to mix until fully combined.
Ice cake once fully cooled.
